Merely a note to reviewers Draining zucchini . DON'T You lot are taking out the moisture the recipe requires. I adequately firmly pack shredded zucchini then I do not fold in I use a beater on medium speed and the bread is moist and skillful

This is a great recipe. I will keep this recipe in my file box in the kitchen for many future uses. This is the kind of recipe that I would make copies of to share with friends. Really delicious. Equally always I set the recipes exactly as they are submitted. I believe this is the only fair way to offer a review. If a cook adds or subtracts from the original then they are not preparing the recipe as written and actually should non base of operations at that place stance on the terminate issue. I ordinarily just ignore the reviews that say "I added this or added that"! I am a big supporter of preparing the dish equally written and and then reviewing that outcome. I don't dabble with the recipe until after I have prepared it properly every bit submitted. This is 1 of the few recipes that I would give five stars to.

You guys are gonna think I'm crazy but this recipe makes really bang-up cookies! I made ane loaf of bread and rapidly realized that I didn't have a 2d pan so I dropped spoonfuls on a foil lined cookie sheet. They came out and so good! They were well-baked on the outside and moist and chewy on the within. Just don't overbake them. I sprinkled a little powdered sugar on the pinnacle and they were wonderful. Thanks for sharing this recipe...it's one of my favorites!

This is a tertiary generation recipie for our family. We likewise cascade one loving cup oil in the blender, and fill up to the three loving cup measure out with sliced zucchini. Grate together, puree really, and and so pour into baggies etc. and freeze. Keeps very well for months. When ready to make breadstuff, thaw and employ.

This is the 3rd zucchini staff of life recipe I have tried this summer. And so far it is the all-time. Added raisins. A keeper for sure.
10/06/2001
I had a large zucchini then I doubled the recipe. I used 1 1/2 C oil and 3 i/2 C sugar. I though the result was good, but not fantastic. Next time, I will effort the chocolate zucchini bread versions.

Excellent recipe. Like others, I substituted WW flour for white flour and chocolate-brown sugar for white sugar. I as well cut the oil in one-half by using a i/2 cup of oil and a ane/two cup of applesauce. Finally, like others, I used iii.5 cups of zucchini. For ease in packing lunches, I like making muffins. The batter amount was perfect for 24 muffins. I kept the oven temperature the same, and they were done in 20 minutes. Excellent recipe!!
06/26/2010
I don't understand why this recipe has such smashing reviews. The simply modification I fabricated was adding chocolate chips, but the zucchini bread itself was bland and also sweet. All I can gustation is sugar. Of course, later the fact I went back to read reviews and many people give this recipe 5 stars but change the entire recipe! Well then, you aren't rating this recipe, you lot are rating your own recipe!

~WOW~~~~~This is absolutely WONDERFUL bread! A little high on the cal/fat side...only super-tasty! Minor changes: 2cups saccharide. Extra cinnamon. 1loaf with walnuts, 1loaf with choco-chips. Both were absolutely succulent!! Side by side time I will attempt lower cal/fat...but for at present, this is the best!! (FYI: 2cups zucchini is about 1.5 zucchinis for people like me who didn't know, prior to purchasing) Thanks "MOM" !!!
02/09/2011
Unbelievably moist and succulent! Amazing! The original recipe is great, but when I baked this staff of life the second time, I did the following changes: -I added i more tsp of cinnamon because I found the concoction a little banal. -I used iii cups of zucchini - I used half whole wheat and half white flour, no ane knew! -I used one-half dark-brown sugar and one-half white saccharide for a richer taste YUM!

A baker, I am non but this recipe is fool proof it you lot follow the directions exactly. Even so the recipe says to beat flour mixture into creamed mixture. Don't practise this considering it will create "tunnels" and add to much air to your batter making it less dumbo as bread should be. Instead stir with wooden spoon just until blended. Also, as many others did, I used half applesauce and half oil; half white carbohydrate and half brown sugar. I omitted the nuts (merely because I don't like them). Also, I use coconut oil for preparing pans on all my baking. This helps keep the sides of the bread from getting as well chocolate-brown. Thanks for the recipe!

This is my MASTER zucchini recipe. No need to await further. I've tried 3 recipes from this site, and this one is the BEST. I do one-half and one-half oil/applesauce and subsititute and reduce to ii cups of carbohydrate - plenty sweet! 1 cup brown sugar for the white. The brown sugar adds and then much more richness and depth of flavor than merely using all white carbohydrate. I did outset using at least 3 cups zucchini. It melts and disappears into the bread and all you end up tasting is the cinnamon. So 3-4 cups is best, with true zucchini flavor. It won't be green, trust me. No nuts needed or draining/squeezing out the zucchini either. The water adds to the moistness of the bread. 55 min. cook time for me. I did 60 min. the first time and it wasn't as moist. I live in the city, and then I don't take a garden, but since zucchini is available year round, you tin can brand this anytime of the year. Super quick and piece of cake to make and my 2 and 5 yr. quondam inhale this stuff. Don't tell them about the veggies and they won't know it'southward there!!
08/fourteen/2008
The best zucchini staff of life I've ever made. SO good. The cinnamon taste is perfect, and not at all overwhelming. I made two pocket-sized changes. I don't like nuts, then I used chocolate chips instead. And I baked in a 13x9 inch casserole dish instead of two loaf pans. Turned out perfectly. I brought information technology in to piece of work and had TONS of requests for the recipe. A tip: Don't "drain" or attempt to dry out your zucchini. The zucchini is what gives this bread a lot of moistness. Thanks for the recipe, this ane is a KEEPER!

Ok, I accidentally perfected it! I accept made this twice before and loved it. This recipie as/is is dandy, but this time on accident I meant to put the 3 tsp of cinnamon and instead I did 1 1/2 TBSP. (I thought my 1/2 tbsp was a tsp) Well, it turned out great. Too this fourth dimension instead I was making information technology for my husband and he isn't a big nut lover then I replaced the walnuts for 1 1/ii cups of oatmeal to give information technology texture. Yum!!! I did a struessel on top to stick with the oats theme and that was the perfect mode to "elevation it off"!(topping 2c. oats, 3/4c. flour, 1c. dark-brown sugar, 1tsp cinnamon, three/4 c. butter and mix)
02/09/2011
AWESOME! I substituted applesauce for the oil, 2 cups of wheat for the white and I did not sift the flour. It turned out incredibly moist and delicious. I didn't put any topping on information technology; the bread every bit directed creates a wonderful crispy crust. I cannot believe how easy, succulent and healthy this bread is!
09/03/2009
The given blistering temperature is unrealistic. It took 1 hr and 20 minutes for the loaves to go done. I definitely recommend using 350 degrees.
09/25/2011
I have fabricated this several times and it is always a hit. I followed the recipe exactly as written except I substituted 1 cup of dark brownish carbohydrate. I found it was much easier to mix the shredded zucchini into the wet ingredients before adding the dry ingredients. Otherwise the batter is and then stiff you can't fifty-fifty stir it.
03/03/2014
4,688 reviews and 5 stars? for reals. Aye for reals. super deeeilsh bread. I took "the most helpful review" and followed this sage advice- one-half the oil with applesauce, increase zucc to 3 cups and reduce sugar to ii cups (i white sugar, one dark-brown carbohydrate). information technology will take all your self control to not eat the whole loaf.
06/22/2012
This recipe is the best zucchini bread recipe you will detect. I use one cup of white sugar and ane cup of dark-brown saccharide instead of one-i/iv all white. The dark-brown sugar adds a niggling extra unique flavor that makes it special. 2 cups total is enough sweet. I also use 3 cups of zucchini instead of 2 and 1/2 cup sour cream and one cup of mini chocolate fries. Make notation of a tip: grit your chocolate chips in flour before adding them to the concoction. This gives them a low-cal coating that makes them float and mix more even through the bread instead of sinking to the lesser. . These slight twists brand this bread moist and incredible. This freezes well when wrapped in parchment or wax paper and and so in foil. Then I slide information technology in a ziplock bag. It defrosts moist and about as perfect as fresh. My family unit inhales this stuff!!! Sometimes I have to sneek a couple loaves into the freezer just to make it last!
eleven/14/2006
Our new family favorite! This was absolutely fabulous! I did substitute one/2 loving cup of apple sauce for 1/2 of the oil and I used the crumb topping another reviewer suggested (cook 4T butter, mix in 1/ii cup brown sugar and 1/2 cup flour crumble over loaves before blistering).
08/ten/2007
This bread is crawly! I combined the advice of several dissimilar reviewers and used one/2 whole wheat flour + 1/2 white, I added 1 tsp nutmeg (mmm!), substituted one/2 loving cup absurdity for one/2 of the oil, used one cup white sugar and 1 cup brown sugar (though I might try to decrease the white sugar to 1/two cup since it was nevertheless very sweet), and added 3+ cups grated zucchini. It took between l-lx minutes to broil. It was very moist inside and crispy outside, and incredibly tasty! Thanks!
09/07/2008
This was the worst bread ever. I followed the reviews, added in a little more zucchini, didn't drain it as suggested. The bread never got washed after more than 90 min.still paste. I wasted a lot of bully ingredients. Never again!
03/x/2011
I like to plow these into muffins for my one year one-time. Put them in for well-nigh twelve minutes.
07/26/2013
This is a great recipe as-is, and a recipe that will stand to reasonable "tweaking" to suit individual tastes. Exist aware that your batter will almost resemble a dough before you add the zucchini. Since the zucchini isn't tuckered prior to adding it, it will contain all the wet you lot need. No additional water, milk, eggs, etc., are necessary. If you can't stir the zucchini in by manus it's OK to use the mixer and in fact will give you more of a batter-similar consistency by helping to release some of the moisture. Also, if you add boosted zucchini, crushed pineapple, shredded carrots, etc., you must conceptualize a longer bake time due to the added ingredients which contain even more than moisture. If the tops of your loaves are condign also brown spray the underside of foil with cooking spray and loosely comprehend the loaves until they are broiled through.
08/thirteen/2003
This was a simple recipe, just a wonderful bread, The second fourth dimension I fabricated this,I also did half oil and one-half applesauce, even so very moist, I also shredded a carrot, increased the walnuts to 3/4 cup and added raisins to one loaf information technology'south merely wonderful, wait no further this is the ultimate zucchini staff of life recipe!!!
07/12/2011
Yum! Nice and moist :) To brand it a bit healthier, I used two cups whole wheat flour and one cup ap flour, subbed one/ii cup applesauce for 1/2 cup of the oil, used 1 loving cup brown sugar and 1 cup white carbohydrate, increased the shredded zucchini to 4 cups(lightly packed), decreased the cinnamon to two tsp, and added 2 tsp of pumpkin pie spice! I besides left out the nuts. The acme was a chip likewise moist, so side by side fourth dimension I'll make certain my baking soda and powder aren't likewise old (every bit I heard that tin can contribute to the problem), and will be sure non to over-mix the wet and dry out ingredients. I remember information technology's best to mix the wet ingredients well with a electrical mixer and and then stir together the wet and dry past manus. Overall, a great recipe! LOTS of flavor! I retrieve I could even use all applesauce and reduce the carbohydrate by another 1/2 cup and it would still be keen! Thanks for an awesome recipe!
08/25/2007
This is actually, really good! After reading other reviews, I decided on the following changes. I replaced 1/2 of the oil with a 1/two c. of mashed banana. I used ane c. white and 1 c. chocolate-brown sugar and three c. zucchini. This is past far the tastiest bread I have ever had. Endeavour information technology and you'll agree!
01/09/2003
First-class Recipe. I replaced oil with applesauce and added 1/2 tsp nutmeg. Starbucks has discontinued their Zucchini Breadstuff so I was pretty much forced to detect a recipe for my married man. He absolutely loves it. It has become a favorite in our household!
09/09/2012
Crawly recipe!!! Used 3-four cups of zucchini, 2 Cups saccharide (1 white, ane brown), one cup whole wheat flour and 2 White flour, Simply a few modifications equally other suggested. Also used a dash of pumpkin pie spice in addition to the cinnamon. Thank you for the wonderful recipe!
08/27/2012
Peachy basic recipe. Used one-half oil and one-half absurdity as suggested, and simply a cup of white sugar, and (almost) a cup of brown saccharide and it was plenty sweet! Used 4 cups of zucchini (three zucchinis) and it was perfectly moist!
02/06/2009
VERY Expert BREAD!!! I did modify the following subsequently others suggestions: used only whole wheat flour, 1/ii oil - 1/two unsweetened absurdity, 1/2 white i/2 brown sugar, reduced total corporeality of carbohydrate, increased the amount of zuchinni to double. Important DO NOT FORGET TO SIFT Dry out INGREDIENTS!!! I did in my second batch and the difference in the texture is NOTICEABLE. Also, I had to let them broil ten to twenty minutes longer than called for.
08/eighteen/2010
Amazing bread! My boyfriends grandma used to brand zucchini bread that he loved and then I tried to observe a recipe. To quote him "couldn't swallow information technology fast enough"...this is coming from someone who is a pretty picky eater and does not like many vegetables. One question I had upon finding this recipe was if the zucchini should exist peeled earlier grating and the reply is NO! It adds a nice texture and y'all can't really tell once it'southward cooked.
12/24/2007
This bread is good, only it can use some changes. - more zucchini - less sugar - less cinnamon These didn't seem to have enough zucchini for me then I really doubled the amount and information technology was perfect. I want to sense of taste the key ingredient in my breads (assistant, zuchinni, etc.) and a sweet bread detracts from that flavor I'm seeking. I used 1.5 c brown sugar - chocolate-brown saccharide adds another element to this bread. Equally for cinnamon, it threw me off because I'm not used to tasting it in a zucchini breadstuff. I'll add less adjacent fourth dimension. I besides tried one of the suggestions I read in other review and added some apple sauce with the 1 c oil. It did make them moist. That's actually something I ordinarily do when I brand bread or block.
03/06/2011
This Zucchini Bread was delicious! I omitted the walnuts and broiled in a rectangular 9x13 baking dish. This ane'due south a keeper and great for those get-togethers at abode or at work or anywhere you similar! Cheers for sharing v monte! I'll will brand this again and again!
08/24/2012
Best Zucchini bread I take ever had! I followed others suggestions and used brown sugar with the white and simply ii cups. Also added the crumb topping, which made it even better :) I didn't squeeze out the zucchini and the bread came out and then moist and perfect. Volition definitely exist making this over again!
x/12/2008
I take made this recipe twice today exactly the fashion the recipe reads and both times the viii x 4 loaf pans overflowed and did non cook right. I take never had whatsoever problems with whatever recipes from this site. Is it possible that the recipe on this site is incorrect or is information technology a problem with the fact that I am in Colorado with high altitude? Any aid would be appreciated.
11/14/2010
Perfect!
08/04/2001
This was a big hit with my family. I omitted the walnuts and sprinkled sesame seeds on height.
08/15/2007
This is a family favorite I've been making for years. I always use whole wheat flour, decrease the sugar to 1 cup, and utilise half absurdity/half canola oil. Yous can always throw in an extra handful of grated zucchini! Lately, I've been experimenting with various combinations of other fruits/vegetables. Our very favorite variation is i cup grated zucchini, 1 cup grated yellowish squash, 1/two loving cup grated carrot, and one/2 loving cup grated apple tree (peel it beginning). I like to throw in a handful of sunflower seeds for some extra protein. These are absolutely delicious!
07/31/2009
I was looking for a zucchini bread recipe and I found this one. Information technology is absolutely scrumptious! I'll go on this and always make this recipe. It was moist and easy to make and went down real good! I've fabricated it several times but information technology always falls in the middle..withal good..whatever suggestions?
08/sixteen/2002
I've made this bread twice; once as directed, and a second time with applesauce in place of two/3 of the oil, and egg substitute for function of the eggs called for. It was very moist the beginning time, a lilliputian more spongy the second, but later the low-fat bread sat for a twenty-four hour period, it was more moist. Very Succulent!!!
02/28/2005
This recipe is Non zucchini breadstuff. My mom makes the best zucchini bread and it takes nothing like this one. It was sweet bread with some green in it. I guess anybody else liked it but I idea it was really gross and threw both abroad after they came out.
04/25/2010
Awesome staff of life! Nevertheless, I recommend calculation more zucchini! Information technology's a must! I used at least three cups. Also, instead of using all vegetable oil, I used 1/4 loving cup of unsalted butter and 1/4 cup of oil. Made 1 loaf with chocolate chips. Both loaves were topped with my streusel batter for more than texture! I wouldn't skimp on the fat... but mayhap lower the sugar to around i one/2 cups.
06/27/2000
This bread ROCKS. Tasty and unproblematic. I tried adding brown sugar instead of white, and it was a bad thought. But adding raisins gave it an fifty-fifty better flava.
01/26/2011
absolutely delicious! i used 1/ii cup vegetable oil and 1/ii cup applesauce. could always employ more than ii cups of zucchini and i believe the recipe would still be fine. i used 1 cup of white sugar and i cup of brownish sugar. i think i'll effort decreasing the sugar by one/2 cup next time. lovely recipe! thank you!
08/16/2001
This recipe is and then delicious! Everyone loved it and so much I concluded upward making this zucchini bread 4 nights in a row!
08/09/2000
This was a great recipe for all the zucchini that keeps popping out of the garden! I even made a batch and added drained, crushed pineapple to it! I prefer to apply 3 slightly smaller bread pans for the recipe. So piece of cake that I've decided to freeze my shredded zucchini in premeasured quantities for adjacent time!
10/03/2006
I changed a few things in the original recipe. I definitly did not want all those calories with a cup of oil, so I subsituted 1/ii butter and one/2 applesauce. The texture of the bread didn't endure at all. I also used 3 plus cups of zucchini, and cut the saccharide down to a cup and a half. I fabricated 8 loaves and each one was perfect.

My 12 twelvemonth old daughter and I LOVE this recipe!! We use information technology for more than just zucchini bread, too! Nosotros utilise it for banana nut & apple tree raisin. We besides bake more than just bread with it! We take our large muffin tin can, greased - no papers, and put in 1/iv scoop batter for yummy muffins! Banana muffins generally broil for xx minutes at the suggested 325 degrees, merely I start checking them @ 15 minutes for that gold brown elevation. Apple Raisin takes closer to xxx minutes as muffins because the apples are then moist (like zucchini). I broil the assistant nut breads for the aforementioned time and degrees as the zucchini recipe calls for, just the apple tree raisin bread cooks for the full lx minutes, or until toothpick comes out make clean :) We always employ half the oil, as many others have suggested/done, 1 cup white sugar and only 3/iv cup dark-brown sugar (Instead of the recipes calling for two cups white carbohydrate). When we plow this into banana nut bread, we use 5 bananas and every bit many crushed nuts every bit we desire. When we make apple raisin bread I take cutting upwardly five large Jonathon or early gilded delicious apples sliced modest, plus ane cup raisins. When/if you effort the apple raisin bread, the batter seems VERY dry out before you lot add the apples. Practice not despair, adding the apples DOES make the concoction more pliable ;) This recipe is a MUST Try!!!!! :)
09/12/2002
Having read all the reviews decided to brand this and added a tuckered cup of crushed pinapple. When I tested the bread later on the maximum baking time the tester came out make clean from several places. After the loafs cooled completely sliced one but the texture looked yet on the raw side. Put it back into the oven for some other fifteen minutes but still doesnt take a cooked nibble. What did I practise wrong??? Appreciate any help before I effort to make it again! Thanks!
09/21/2009
I get a lot of my recipes off of Allrecipes and this is the beginning recipe that forced me to write a review! Excellent bread (although it'south more than like a block... not sure why no other reviewer has made this comment). I have made this block about ten times this summer and go along getting requests for information technology! Everyone loves it. I accept never made it with the nuts withal, I like the cake by itself. I put 1 3/4c saccharide and next time I make it I will try 1/2c oil and ane/2c unsweetened absurdity. This is the best recipe I have ever tried and it doesn't last very long.
08/eighteen/2012
I've upped the zucchini to 4 cups equally a highly rated commenter suggests and it is manner too moist, similar it isn't cooked all the way. So 2-3 cups is my max. I will try using 4 cups again sometime but squeezing it out start (I'd like the fiber and nutrients from the zucchini, merely not as much moisture). I will also try swapping butter for the oil since it volition solidify when cooled and won't add together to the moist sensation.
03/14/2011
Information technology's tasty...only, information technology seems a bit ridiculous that the amount of sugar is near equal to the amount of flour. Id encourage you lot to be creative and create a healthier version for your family: white whole wheat flour, absurdity, decreased sugar (perhaps saccharide substitute if not serving to kids)....
10/21/2005
This is great! I use it time and time once more, making many batches to share at work, and even as gifts to neighbors. Be certain to check periodically with a toothpick & pull it out at but the correct moment, earlier it get's too dry.
02/28/2011
So glad I read the reviews earlier making this, with some changes information technology came out SO expert! I used about iii one/2c. grated organic zucchini, 2c. whole wheat flour & 1c. AP flour, for the sugar I used 1c. lightly packed dark-brown carbohydrate like someone suggested & three/4c. organic blue agave nectar, two eggs instead of 3, and since nosotros don't utilise veg. oil, I put in 3/4c. melted butter. Everything else was like the recipe called for and information technology's delicious! Not too bad for my starting time time making zucchini bread. :)
09/fifteen/2011
only change is to cutting the oil in half and use absurdity. Bread is moist and tasty. I broil in mini loaf pans because I feel that they bake more evenly and quicker. This is my favorite zucchini bread recipe.
08/12/2002
Everyone loved this breadstuff! I omitted the nuts, simply besides that, I followed the recipe exactly and loved the results. Definitely a keeper!
xi/22/2002
I was a little concerned at first, earlier I added the zucchini, the "batter" was mashy, but the wet from the zucchini loosened it up and information technology was wonderful, I also used white lily flour, I'1000 not much of a baker merely I had heard proficient things about this flour, and then I don't know if it was the flour or your fantastic recipe, simply this gustation mmmmmmmmmmmmm expert!, Cheers for sharing it!!
07/31/2000
This is a fabulous recipe...... moist and piece of cake to brand. Likewise, no running to the store to go any crazy ingredients. Just a unproblematic and delicious recipe.
09/xi/2002
My mom came to visit last Lord's day and brought me a huge zucchini from her garden and I had no idea what to practise with it. And then I checked out this website and decided to brand this bread. This recipe is actually practiced and piece of cake! I cut the oil down to 3/four cup. I likewise made one loaf of bread and about viii actually big muffins! I will make this over again soon.
01/23/2011
Perfectly moist. Wow. Post-obit other user's suggestions, I used almost 3 cups of zucchini (information technology was going to become bad anyway), I used half unsweetened applesauce and half oil, and I used but under 2 cups of sugar (half white, half brown) because nosotros don't like really sweet zucchini bread. The formula is dead on, and I've never made a ameliorate loaf. Wonderful recipe.
07/27/2008
For a healthier version, replace half the flour with whole wheat flour. Likewise, supplant half the vegetable oil with applesauce. I too added a little allspice to the batter. Really a great recipe!!
03/21/2011
I made this exactly as the recipe says and it was terrific. (I did substitute applesauce for half the oil, just to lower the calories a bit.) I made 1 loaf with chocolate chips, for diverseness. Anybody who tried information technology loved it! I'll definitely make this one once more.
07/24/2009
It's truthful. This is the all-time zucchini bread recipe out there. I keep trying other recipes, and thinking "hey, this is pretty expert", then I make Mom's Zucchini Bread again and realize that's information technology's just that much better. I guess I should stop making other recipes and but stick with this 1, considering it truly is the best.
07/23/2011
The earlier comments are excellent. This is a adept starter recipe if you are a good cook, but maybe you should keep looking if you never made zucchini bread before. As well much oil. I utilise 1 stick butter and half cup of applesauce. more flavor less grease. Of class this reduces moistness a piddling, so I utilize 1 loving cup of brownish carbohydrate. More than moisture and flavor. TOO MUCH Sugar, I reduce the overall sugar amount by three/4 cup. You'll like information technology amend less sweet. Now, with more real flavors in the recipe, y'all can reduce some of the cinnamon. three teaspoons? too much! merely a flake of applepie spices gives it fuller flavor though. I broil it in muffin papers, at present I accept a perfect breakfast muffin. (Blistering about 25 min.) And the guy who said, "don't drain the zucchini"? Pick the freshest ane you can, grate it, stir it in the sparse concoction (before flour) and let it weap to get the additional moisture. Then add flour and basics. I too top mine w/ cinnamon sugar and chopped basics for that final touch (before blistering.) The problem with cooks? We all recall our way is better :) I'thousand sure your new way will exist better.
11/10/2006
Excellent. A keeper for sure. Reduced saccharide to 2 cups and increased zucchini to 4 cups and it is delish and smells fantastic.
07/24/2002
This was very moist & yummy as well. I tried them in muffin tins and my 11 year old son fed all of the nieghborhood boys with them! I doubled it and and so cut the oil to i 1/two cups. Delish! Cheers Five.
09/eighteen/2014
Wow! I've never made anything with zucchini, just I had a friend requite me a ton for costless...so here I am! And this was delicious, I didn't change a affair. I made information technology exactly equally described and it was a HUGE hit with my husband and my teenage boys. I made some with nuts, some without. I hope it freezes well because I think I know what to practice with all this zucchini. Thanks for the recipe!
01/07/2011
I have probably fabricated this recipe at least thirty times over the past couple of years. Information technology comes out perfect every time. We usually swallow i loaf and freeze the other, and it is simply as expert out of the freezer. Definitely 5 stars.
03/18/2011
The all-time zucchini bread recipe I've plant! I like adding chocolate chips if I don't have walnuts or instead of the walnuts.
07/30/2000
I couldn't believe this was zucchini. Took a loaf to piece of work and had to share the recipe.
06/26/2005
I didn't intendance for this at all! It tasted like a nice, moist, and way likewise sweet cake. There wasn't enought zucchini to make it taste significantly like zucchini bread.
09/22/2011
Excellent. A cup of oil is a lot, but these muffins sure gustation skilful! Especially when I made them into muffins using chocolate chips and walnuts. Yum!
03/fifteen/2011
Groovy recipe... Its real sugariness and then my kids love information technology and my husband. I high recommend it to anyone who loves zucchini.
08/03/2000
My grandma gave me her zucchini bread recipe years agone, and information technology'due south the only one I've ever used, but somehow it's come up upwards missing recently. I looked everywhere for a recipe that was as close to hers as possible, and this is it. Nobody knew it wasn't the same 1 I'd always used, information technology's that proficient!!
12/16/2014
I can't review the effect of this verbal recipe because I only used it as a guideline. I had lot of zucchini to use up and couldn't find my usual recipe. I was mainly looking for ingredient ratios. This recipe has potential, but to the experienced centre, there are several changes that immediately demand to be made. That is mode as well much carbohydrate and mode besides much salt. For a good traditional taste, effort just i cup of Chocolate-brown sugar and 1/ii tsp. of salt. Use three cups of zucchini. Practice not drain information technology, do not peel information technology, practice not seed it. Cut off the ends and grate it. If y'all must use that much oil, use oil that tastes like something; melted butter and/or coconut oil. I similar to use 1/2 c. butter and 1/2 c. absurdity. The batter volition be ridiculously thick until you lot add the zucchini. Fold it in, wait 5 minutes, stir over again. It will be thick but workable. Broil until information technology is done (until toothpick comes out make clean). Due to differences in moisture levels in the zucchini y'all use, that may be the fourth dimension stated, it may be way longer. Await 60-90 minutes for a loaf. Pecans complement zucchini far more than than walnuts, IMO. With those changes only otherwise following the recipe, I got wonderful results.

I made it twice. I listened to other people'southward advice and increased zucchini amount and didn't squeeze it dry. Both times, I baked it for hours and it still never baked through! The outside would bake and the inside remained raw. I ended upwardly cutting it up and and so trying to broil slices in the oven. That didn't help much, though. The taste wasn't bad, but there's a departure betwixt "moist" and "raw". Sorry, tin't give any more than ane star. Though, to be honest, my ane start is not for the original recipe, but for all the "advice" in the reviews I listened to. Maybe, I should have stuck to the actual posted recipe...

Used 3 cups zucchini and 1/2 cup walnuts, best recipe! 60 mins and the breadstuff was moist and delicious!

This recipe is absolutely fabulous. And so simple and easy and tastes wonderful - you must try it! I make it as is - no substitutions.

Excellent! I omitted walnuts and substituted 2 small bananas for 1/iv cup of oil -- a very subtle banana sense of taste and extra moist. Delicious, and can't wait to brand once again!

Not bad recipe for zucchini staff of life- it'south basic, simple, and delicious. You can sub applesauce for some oil, or wheat flour for some white, or even some brown sugar for white sugar. But this time I followed the recipe pretty exact and it turned out deeeeelicous. The batter is very thick until yous stir in the zucchini, which adds lots of wet.

This was really great and easy to brand. I didn't accept any applesauce and I didn't want to put a full loving cup of oil in. I searched my pantry and fridge and I had some vanilla yogurt. Bam! Information technology worked great. Half oil, half yogurt, and information technology came out peachy tasting. I am storing the staff of life in the fridge because I did use yogurt, but just idea I would share that with the balance. Thanks for the recipe!

Very tasty! I followed the recipe exactly, and the only complaint I have is that it was a bit as well sweet (and I'm not usually ane to complain about that). Next time, I will cut downwards the saccharide.

FANTASTIC!!! my 1st effort at zucchini bread. The only affair I did was substitute 1 cup brown sugar for 1 of the cups of white, and I added the oat topping that some suggested about twenty min. into cooking time. Oh and I also used about 3 cups of zucchini (3 cups was one large zucchini grated, in instance anyone was wondering) It was so delicious! I honey that it makes 2 loaves, because I tin give one abroad to a neighbor and it really blesses them! A dandy way to use up the affluence of summer zucchini. Grate it all upwards, and freeze what y'all don't utilise so you tin can brand this staff of life any time of the year. Cheers for the post! I may try adding chocolate chips sometime for fun.

I added 1t nutmeg and for the top I spinkeled candied ginger minced very small, raw sugar, and sliced almonds. I made this for alot of my coworkers and all of them asked me to make them their own loaf-it was a hit thanks for the suggestions and the recipe

Yum! And yum again! I combined a few different suggestions and it was VERY moist and succulent! If y'all prefer it not so moist maybe stick to the 2 cups, only my family loves it! I used three cups of zucchini (not squeezed or drained), ane cup white sugar and 1 loving cup brownish sugar, i/two cup oil and 1/ii loving cup applesauce and then put the crumb topping (ane/2 loving cup regular oats, one/2 cup brown sugar, 1/iv cup flour, 1/4 teas. cinnamon and 1/4 cup butter) on later on about 20 minutes of cooking. Delish! Volition be making this 1 again!

This is very similar to my swell grandmother'south recipe. Her recipe calls for less sugar. I have also modified it to reduce the amount of oil. I utilize ane/4 cup vegetable oil and iii/4 cup unsweetened applesauce. I also use this base recipe for banana breadstuff likewise. Yummy!
09/05/2009
This was exactly what I was looking for! I made but a couple of changes. 1)I used 2 cups regular flour 1cup whole wheat flour. two)I used but one cup white sugar and 1 loving cup brown. iii) I added in addition to cinnamon,ane/2tsp-1tsp estimated ginger, clove, nutmeg, and cardamom seed powder( this gave the bread a warm spice and amazing aromatics.4)I used 1/2cup veg oil i/2cup natural unsweetened apple sauce v) Finally, I put in 4 slightly drained cups of zucchini. Purrrfect! I recommend toasted with a lot of butter.

Later on making banana bread for 20 years using various recipes, I volition never make another basic sweetness breadstuff from Whatsoever other recipe...my whole family unit agreed! I had zucchini and three over-ripe bananas and so I split the batter in two and added the mashed bananas to one half and the zucchini (one cup) to the other one-half. 2 wonderful perfect loaves. Fantastic! Thank you!

Perfect! I made in four smaller bread pans rather than 2 large, and I followed another reviewers communication and added a nibble topping virtually fifteen minutes into baking. (Crumb Topping: i/2 c. regular oats, one/two c. brown sugar, 1/iv c. flour, ane/iv t. cinnamon, 1/iv c. butter.)

You lot can always trust a recipe that starts with "Mom's" or "Grandma'southward." I was a little worried about this recipe because so many of the reviewers were lessening the sugar and adding brown carbohydrate, or lessening the oil and adding applesauce. I made the recipe as is and it is nothing short of amazingly perfect. I added about 1/two cup of grated carrot which doesn't seem like a lot, merely information technology adds a bit of color and brightness to each slice. When I brand another batch of this zucchini bread, I might endeavour it with the same variations, simply I'm glad I made information technology as is because information technology was exactly what I was expecting!

I doubled the recipe and froze the actress. Don't need to worry most freezer fire because they won't be in there long. This recipe turns out very moist and delicious. Perfect as a snack with a cup of coffee.

Lots of fun to make with my two year old! I read a bunch of reviews earlier making it... took modifications of a few people and adjusted recipe. Used ane/2 cup oil with 1/2 loving cup applesauce; only ii cups of sugar, 1.5 tsp cinnamon and 1.5 tsp. nutmeg, added zuke to wet ingredients Before...then made well in dry out ingredients and added all moisture to middle of dry. Folded in with safe spatula for awhile then did a quick couple of mixes with wooden spoon at end. Added about 1/ii loving cup regular choc chips to one bread batter, left other batter alone. Cooked for most 50-threescore minutes... timed initially for 30 minutes, then checked staff of life every 10 minutes thereafter, rotating pans each bank check... Bread was delicious... a recipe worth keeping in my box! Thanks Alot!

Succulent zucchini bread!! To make the recipe a tad healthier, I used 3/four cup all natural applesauce and 1/four cup olive oil. I too used ane cup splenda, 1/ii loving cup splenda chocolate-brown sugar alloy, and i/two cup white sugar. I likewise used 1 cup whole wheat flour, and left the other two cups white. Finally, I increased the zucchini to 4 cups and left all the wet in it to make the bread fifty-fifty more moist. I used i cup of nuts, equally chosen for, and it was the perfect amount. I baked the ii loaves for 50 minutes, which was perfect. This was a wonderful recipe for zucchini bread, then much meliorate than the dry vegetabley stuff I've grown upwards on!
